Pfsense on a old laptop

Can I Run Pfsense on a old 6 year old laptop top using two rj45 to usb adapters?Would i also have to put inbetwen the cable modem and the switch?

Yes, it’s possible. You’d have to decide for yourself of course whether performance and reliability meet your requirements.

As for the network topology, this is no different than any other pfSense install. You don’t even need more than 1 physical NIC if you use VLANs, but of course you would share that NIC’s bandwidth across all networks.

USB network adapters and pfsense (or OPNsense) do not really work reliably. Some will claim that it works for them, many others will say how much of a headache it caused. I’m on the headache side after trying many different chipsets.

So yes you can, but no you probably shouldn’t unless it is just for testing and learning.
