I just switched one of my clients on Microsoft Exchange Online from an ISP hosted email server. How does one perform an online backup of the exchange data? According to a quick google search Microsoft is not responsible for your data but provides no in house way to backup to external place.

You are correct that Microsoft doesn’t provide backups. They do have some options to restore mail that is accidently deleted but its nothing like a real backup.
As far as options go for backing up here are some options to consider:
-Active Backup for Microsoft 365 which is available on some Synology devices, FREE
-Asigra on FreeNAS/TrueNAS, does have a cost
-Altaro Office 365 Backup, does have a fee + choice of cloud storage fee
