Apologies if this was covered before, but can anyone point me the correct way to change the CPU and/or RAM settings for the already created VMs? At least from the XO, I can’t find a way to do it.

Shut down the VM, then go to advanced tab and scroll down to those values. You can click on them the change them, then save back at the top. Start the VM. One of my Windows servers got bent out of shape when I went from 4 to 8 processors, and up to 16GB of ram. Ending up having to go back to 4 and down to 12GB to make it stable again. Linux VMs have just taken the change and been happy.
It’s not obvious at first but you can just click on the memory or CPU and change it. You can see that at the 6:00 minute mark in this video:
